Sustainable viticulture in the Langhe

Our philosophy is based on a simple yet fundamental principle: a deep respect for the raw material and for the environment that sustains us. As wine artisans, we consider the vineyard to be the beating heart of every one of our labels. We personally oversee every stage of the growing cycle, practising sustainable viticulture that is entirely free from the use of herbicides, and blending traditional knowledge with the most modern ecological practices.

This concrete commitment to biodiversity and soil health is evidenced by our SQNPI certification -- National Quality System for Integrated Production -- obtained in 2023. For us, farming under integrated production means protecting the vitality of our Langhe hills, using organic fertilisers and limiting any intervention to what is strictly necessary, to ensure healthy, balanced fruit that is the product of a living land.

The cellar as a space for feedback

In the cellar, our aim is to faithfully reflect the work achieved by the vines. We have chosen not to rely on invasive technologies, preferring the value of manual labour and the patience of waiting. Red wine fermentation, driven by indigenous yeasts, occurs spontaneously to allow each grape variety to freely express its own identity and the authentic nuances of the terroir.

From vine management to manual punching down during vinification, we attend to every detail with rigour and an obsessive focus on hygiene. Every bottle bearing the Olivero Mario name is a story, a bridge spanning our family history and the glass of those seeking a wine of character, sustainable and deeply rooted in its origins.

Standing by our convictions

Every bottle from the Olivero Mario winery tells a story of respect, dedication and freedom. For us, making wine is not just a job, but a way of life that we pursue with pride, personally overseeing every stage of the process: from the vineyard to the bottle.

Since 2019, we have chosen to be part of FIVI -- the Italian Federation of Independent Winemakers - joining a community of over 1,800 winegrowers who share our vision.

What does it mean for us to be winemakers? It means putting our reputation on the line. We grow our own grapes, oversee the winemaking process with the same care one would give to one's own children, and sign every label with our name.

It is a responsibility we take on towards the land and towards those who choose our wines: a promise of quality without shortcuts, to preserve the authentic soul of the territory.

Our seal of guarantee

Su ogni nostra bottiglia c’è Ampelio: un vignaiolo che porta una cesta d’uva, la cui ombra diventa una bottiglia.

Il nome deriva dal greco ampelos (vite): "colui che ama e coltiva la vite". Per noi rappresenta:

• Custodia del Territorio: Il faticoso lavoro in vigna, spesso su terreni impervi, per ottenere solo ciò che l'annata concede.
• Artigianalità: Una produzione volutamente limitata a 35.000 bottiglie all'anno, numerate una ad una per garantire l'unicità.
• Convivialità: Un approccio solare e autentico al vino, inteso come espressione di festa e condivisione.

We have chosen to remain small in order to excel in quality.

Our limited productions are the result of a deep-rooted connection to tradition and a constant quest for purity. Choosing an Olivero Mario wine means supporting independent viticulture, built on people, hard work and sincere passion.

For us, independence means freedom: the freedom to experiment, to make mistakes, and to say no when necessary.

We cultivate our 5 hectares in accordance with the principles of SQNPI-certified integrated production: the official seal of a low-environmental impact approach that protects soil biodiversity and consumer health.

Every bunch of grapes is the result of a delicate balance that must be respected, the pure expression of a living land, protected for future generations.

Circular economy in the winery

Scelte semplici, ma concrete, che riducono gli sprechi e danno nuova vita ai materiali.

Per noi sostenibilità significa attenzione quotidiana, non dichiarazioni.

• Recupero dei Tappi in Sughero: Raccogliamo con cura ogni tappo di sughero delle bottiglie che stappiamo in azienda per destinarlo a nuovi utilizzi. Questi piccoli frammenti di natura vengono conferiti a centri specializzati per essere trasformati in materiali preziosi per la bioedilizia. È un gesto semplice che permette a una risorsa naturale di non diventare rifiuto, ma di continuare a vivere in altre forme.
• Riutilizzo Creativo dei Pallet: Per le nostre spedizioni e la logistica di cantina, abbiamo scelto di acquistare e recuperare esclusivamente pallet usati. Questa scelta ci permette di ridurre drasticamente l'impatto ambientale legato alla produzione di nuovo legno e alle relative emissioni di CO2. È un esempio concreto di come l'ottimizzazione delle risorse possa generare un valore sia ecologico che economico.
• Riciclo del Liner delle Etichette: Siamo iscritti alla rete "Anello Forte" per gestire correttamente il recupero del liner, il supporto siliconato delle nostre etichette autoadesive. Attraverso un processo chimico-fisico, questo scarto viene separato e rigenerato per dare vita a nuova carta riciclata e colla. Grazie a questo impegno, recuperiamo quasi il 100% di un materiale che altrimenti andrebbe disperso nell'ambiente.

Packaging and conscious choices

Even what you can't see is part of how we work. Because minimising our environmental footprint is a choice that applies to every stage, not just in the vineyard.

• Clean Energy and Sustainable Hospitality: Our vision is reflected in the facilities where we work and welcome our visitors every day. We have installed solar panels at the winery to meet our energy needs with renewable sources, reducing CO2 emissions. Our new tasting room has also been refurbished to AAA environmental certification standards, ensuring maximum thermal and acoustic comfort whilst respecting the planet.
• Packaging and Conscious Choices: For us, sustainability doesn't stop at the vineyard. Every bottle that leaves the winery is protected by materials that respect nature's cycle: recyclable cardboard, zero plastic, only regenerated materials. A choice consistent with our desire to leave a light footprint.

Our bottles weigh less than the standard: 575 grams for classic sizes, 420 for the slimmer format.
