The cellar as a space for feedback

In the cellar, our aim is to faithfully reflect the work achieved by the vines. We have chosen not to rely on invasive technologies, preferring the value of manual labour and the patience of waiting. Red wine fermentation, driven by indigenous yeasts, occurs spontaneously to allow each grape variety to freely express its own identity and the authentic nuances of the terroir.

From vine management to manual punching down during vinification, we attend to every detail with rigour and an obsessive focus on hygiene. Every bottle bearing the Olivero Mario name is a story, a bridge spanning our family history and the glass of those seeking a wine of character, sustainable and deeply rooted in its origins.
